Education market?

Would anyone be able to point me to some resources for working in the education market? I taught as an outdoor educator for a long time and am considering merging my interests in science, drawing, and teaching in some way.
The only thing I've found is a small subset of an agency in the UK who, I think, works with textbook publishers.
I guess what I'd like to know is what kind of things do Education Illustrators work on so I can start building an appropriate portfolio?

I don't really know how to help you. But I'd look for resources from Kidlit411.com and if you're a member of SCBWI I'd ask the discussion board there and scan the handbook. I bet that has a chapter about the educational market. also Kidlit411 has an active facebook and you could post your question on the wall, and more seasoned folks comment
