Working with an author for a small project

Hello everyone, I got a small commission request from someone who found my profile to create a small children's book for charity in Haiti.
They want a 15 page book (I think that would translate to 16 if we want to follow conventional standards, half of 32) for ages 6-10. The client is on a small budget and I will try to see how I can negotiate things to be reasonable. (I wanna say no less than $200? $150 is pushing)
I have not done small projects like these in a very long time but that was before I discovered this forum and learned all the ropes of the industry.
How should I write the contract to protect my images from being sold from profit?
Also what would be the best way for method for my client to send installments?

@Michael-Angelo-Go It's not that small of a project. Even if it's just 16 pages (7 spreads and a cover?) it would take at least 2 months of full-time work I think? More since you're part-time.
I hope when you say $200 you mean per page, not for the whole book!
I would charge no less than $4000 for the book (probably more though). I know that this is a charity project, but any less than that and I would literally lose money because of spending time on this instead of other projects and would not be able to pay my bills.
For a charity project, it's generous to not charge extra for copyrights. But I think you still have to charge for the time you'll spend on this, and ideally a livable wage.

@Michael-Angelo-Go I charged 2500-3500 for my small books. Even if its for a charity that price is the lowest I'd go.
